Chocolate Cupcake Extravaganza

One rainy Tuesday night, Penny asked to make chocolate cupcakes.

“Not tonight,” I said. “It’s too late. It’s raining. I don’t know if we have the ingredients. I think I’m coming down with something…” I made all the excuses, but she persisted.

So, Wednesday after dinner, we started. We learned about adding hot water to cocoa to make it even chocolate-ier. Penny measured most of the ingredients. Minimal mess was made. The cupcakes were baked and set aside to cool until the next day when they would be frosted.

Finally, the long awaited task arrived: making the frosting and applying it lovingly to the baked cupcakes. I wish I’d read the recipe beforehand. I have a failproof chocolate frosting recipe that tastes great and it super easy to make.

This was not that.

It required melting over a cup of chocolate chips, whipping the butter and sugar then adding the melted chocolate. It was messy (an unnecessary as far as I was concerned). Anyway, the frosting came out of the piping bag like a long turd, but Penny did her best to artistically style the turds on top of the cupcakes.

Because the frosting was so stiff, the sprinkles did not want to stick to the turds, so we ended up patting them on. Now they looked like hand-sculpted turds with speckles of multi-colored corn kernels or something indigestible throughout.

At the end of the day, We ended up with a dozen chocolate cupcakes with chocolate frosting and sprinkles. They were very delicious, despite their look.
